Muffins are one of my favorite breakfast foods to keep on hand. They're quick and easy to whip up, will stay fresh for several days, or can be frozen for quick, on the go breakfasts. Muffins come in a variety of flavors.... blueberry, chocolate, chocolate chip, lemon, pumpkin, to name just a few, along with this recipe for Glazed Orange Muffins.

Today's recipe comes to you courtesy of the Improv Cooking Challenge, hosted by Nichole of Cookaholic Wife. This month's challenge is pairing olive oil and orange.

I've made orange muffins many times through the years, so when I seen the ingredients for this month's challenge, I knew it was time to finally share the recipe on my blog.

These muffins have a soft and light texture, and the orange glaze... oh my, it  gives these muffins the perfect amount of sweetness and flavor. They are so good for breakfast with a cup of coffee, or glass of your favorite non-dairy milk. They're like a burst of sunshine in every bite!

The best bit of advice I can give you when making muffins is this, DON'T overmix the batter. Overmixing will cause the muffin to become dense and tough, which takes away from the tender and airy texture you're looking for. Don't worry about those little lumps in the batter, I promise they will bake up.

Did you know? Olive oil can be substituted for vegetable oil or melted  butter in most baked goods. But what about the taste? That's a good question, as extra virgin olive oil has a very distinctive flavor. But if you use pure or light olive oil, it doesn't interfere with the flavor of your recipe at all.

Glazed Orange Muffins


For Muffins
1 3/4 cups gluten free flour
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
4 large eggs
3/4 cup pure olive oil
1/4 cup orange juice

For Glaze
1 1/2 cups powdered sugar
1/4 cup orange juice


For Muffins
Preheat oven to 350 degrees F
Prepare a muffin tin with 12 paper liners.
Whisk together flour, sugar, baking powder, and salt. Set aside.
In a separate bowl, whisk together the eggs, olive oil, and orange juice until thoroughly mixed.
Fold the flour mixture into the egg mixture in two additions, mixing until just combined.
Fill muffin tins with batter, about 3/4 of the way full.
Bake on center rack until a toothpick comes out with a few moist crumbs, about 18-22 minutes.

For Glaze
In a bowl stir together powdered sugar and orange juice until smooth. Add another tablespoon or two of juice if glaze is to thick.
Spoon glaze over muffins and allow to set for 10 minutes before serving.

Makes 12 muffins

April's tips:
  • To insure the muffin tops don't stick to the muffin tin, lightly grease around the muffin cups.
  • These muffins have a delicate, but noticeable orange flavor. If you would like the orange flavor to be more pronounced, add the zest of one orange to the muffin batter.
  • Use a small ice cream scoop, to easily add equal amounts of batter to muffin cups.
  • To store: Place muffins in an air-tight container and keep at room temperature for up to 2 days.
  • To freeze: Wrap unglazed muffins in plastic wrap and place in a freezer bag. Store in the freezer for up to 2 months. To thaw, place muffin in the microwave for 15-30 seconds.
