We've all been there, we forgot to take something out of the freezer to thaw for dinner, or it's the day before payday and there's next to nothing left in the fridge to feed your hungry family. To the rescue? Keeping some basic staples stocked in your pantry.

I always keep certain things on hand in my pantry, like canned beans, canned vegetables, salsa, rice, onions, cooking oil, vegetable broth, and seasonings. And with just those few ingredients, you can whip up a delicious and filling meal in about 20 minutes.

The Best Ingredients To Use In Your Burrito Bowls

Loading up your burrito bowl with beans and vegetables, is the best way to get the most flavor and protein into them. My favorites to use are canned black beans, corn, diced tomatoes, rice cooked with veggie broth and freeze-dried cilantro, season everything with your favorite seasonings, then top with chopped onion and salsa. Absolutely everything is from your pantry!

If you happen to have some of your favorite fresh toppings on hand, such as avocado, lettuce, tomato, and cilantro, feel free to use those too! This recipe is meant to use what you have on hand, so add your favorites and make this recipe your own.

I add a teaspoon of pure olive oil to my canned beans while I simmer them. I seriously recommend you try it, before turning your nose up at the idea. A Guatemalan woman taught me this trick back in the mid 80's. It adds a wonderful creaminess to the beans, and is absolutely delicious.

Pantry Burrito Bowls

Ingredients

1 - 15 ounce can of black beans
1 teaspoon pure olive oil
Salt, garlic powder, onion powder, and cumin, to taste
1 - 15 ounce can corn, drained
1 - 14.5 ounce can diced tomatoes, drained and rinsed
2 cups cooked rice or cauli-rice

Directions

Simmer beans and olive oil over medium-low heat in a small sauce pan for 4-5 minutes, stirring often. Season to taste with salt, garlic powder, onion powder, and cumin while the beans simmer.
Place the corn in a small saucepan over medium-low heat, with a small pat of vegan butter, and stir occasionally until heated through. Season to taste with salt and fresh ground black pepper.
Layer burrito bowls with cooked rice, black beans, corn, and diced tomatoes.
Serve with chopped onion, salsa, avocado, lime wedges, tortilla chips, or even corn tortillas and vegan cheese!

NOTES
  • I serve this with rice or cauli-rice, depending on what I have on hand, but quinoa would be great too, and would add even more protein to this dish. 
  • Cauli-rice is super easy to make and cook: Rice cauliflower with a grater, place 1 cup of cauli-rice in a microwave safe bowl, cover with a plate, and microwave for 3-4 minutes.
  • This recipe is great for meal prep, just portion out into sealed containers for individual meals for the week. 
  • For the carnivores out there, like my husband, add some sauteed seasoned chicken breast, cut into bite size pieces.
