Loaded Mashed Potato Patties: Veggies First Then Dessert

I adore thick and creamy, homemade mashed potatoes. It's my favorite way of eating potatoes, and brings back comforting memories of my mom's favorite side dish too.

When I make mashed potatoes now days, there are rarely any leftovers. But when there are, or if I intentionally make extra, it's to prepare these yummy loaded mashed potato patties.

They're not hard to make at all, all you need is a little shredded cheese, some crumbled bacon, a sprinkling of chopped green onion and parsley, along with an egg and flour to bind it all together.

Veggies First Then Dessert: Loaded Mashed Potato Patties

Don't just limit yourself to my recipe either, get creative and come up with your own delicious combinations!

Try one of the combos I've used in the past:

  • Diced pepperoni and green bell pepper, mozzarella cheese, and oregano
  • Diced ham and broccoli, cheddar cheese, and a little dijon mustard

I use vegan versions of the above mentioned meats and cheeses, but feel free to use the real deal if you're not following a vegetarian diet.

You can use just about any leftover cooked vegetable or meat. Dice them up and mix then in, you won't be disappointed!

Loaded Mashed Potato Patties

Ingredients

2 cups cold mashed potatoes
1 cup shredded vegan cheddar cheese
1/4 cup bacon bits (I used imitation bacon bits)
1/4 cup chopped green onion
1/4 cup gluten free flour blend
1 tablespoon freeze-dried parsley
1 egg
Salt and pepper, to taste (I used 1/2 teaspoon sea salt and 1/8 teaspoon fresh ground black pepper)
Vegan butter for frying

Directions

To a large mixing bowl add the mashed potatoes, shredded cheese, bacon bits, green onion, flour, parsley, egg, salt and pepper, and blend well with a large spoon or your hand.
Melt a little butter in a non-stick skillet, over medium heat. Scoop up about 1/4 cup of the potato mixture, and form into a ball. Place in the hot pan and flatten it out with a spatula, until it’s about 1/2″ thick.
Fry for 3 - 4 minutes per side, until light golden brown.
Serve immediately for best results.


NOTES:

  • Depending on the consistency of the mashed potatoes, you may need a little more or less flour. You don't want the patties to be sticky, but you don't want to add so much flour, that it overpowers the flavor of the mashed potatoes.
  • These are really good served with eggs for breakfast.
