Chocolate Cherry Monkey Bread: Veggies First Then Dessert #Choctoberfest

Today's recipe is for Chocolate Cherry Monkey Bread, a super easy recipe that uses canned biscuits, chocolate chips, and cherry pie filling. It's kind of like cherry pie and monkey bread became friends, only better, because chocolate joined the party!

Chocolate Cherry Monkey Bread

Ingredients

1/2 cup granulated sugar
1 teaspoon cinnamon
2 packages jumbo biscuits (8 biscuits each)
1 stick (8 Tablespoons) vegan butter
1 teaspoon vanilla extract
1-20 ounce can cherry pie filling
1/2 cup of brown sugar
1/2 cup mini chocolate chips (I used Enjoy Life semi-sweet mini chips)
Maraschino cherries for decoration (optional)

Directions

Preheat oven to 350°F and spray a bundt pan with cooking spray. Set aside.
Cut each biscuit into four pieces. In a small bowl whisk the cinnamon and sugar together. Drop each biscuit piece into the cinnamon mixture, making sure it is coated, then transfer the piece to a bigger bowl. Set aside.
In a medium saucepan combine the butter, vanilla extract, cherry pie filling, and brown sugar over medium low heat. Cook until the butter is completely melted, stirring occasionally.
Evenly place half of the coated biscuit pieces in the prepared bundt pan. Pour half of the cherry mixture over the biscuit pieces in the pan. Sprinkle half of the chocolate chips over the cherry mixture. Layer with the rest of the biscuit pieces, the cherry mixture, and chocolate chips.
Bake for 50 minutes, checking on the bread about 40 minutes into cooking time. If any biscuit pieces are sticking out and browning too much, tent the pan with aluminum foil for the remainder of the baking time.
Remove pan from oven once done, and allow to cool for five to ten minutes. Place a large plate over the pan and invert it onto the plate, tapping gently if necessary for the bread to completely release. 
Top with maraschino cherries for decoration if desired.
